Piantedosi Baking Company, Inc. receives a "Superior" rating in both facilities, Main Plant and Specialty Division, by AIB (American Institute of Baking).

AIB or American Institute of Baking is one of the leading educational and consulting companies in the United States, as well as around the world. They have expertise in all aspects of baking. Many Piantedosi employees take courses offered from AIB in Production as well as in Sanitation and Food Safety. The annual inspection is a way for Piantedosi to have an outside observer look at their total operation and decide if they are doing things the way that they should be, to ensure that Piantedosi products are safe, wholesome, and are complying with all the various laws that food companies have to follow.

The inspector looks at the written programs of every department - Receiving, Maintenance, HR, Production, QA, Sanitation, and Distribution - and all of their paperwork to confirm that programs are really being followed. Everything has to be in writing, or "documented," to be sure that Piantedosi is indeed following the programs they have in place. Then, the inspector takes out his flashlight and spatula and walks through the plant, looking at all the employees to be sure they are following GMP's (Good Manufacturing Practices), and inspecting the building and equipment for cleanliness.

The final rating: There are 4 ratings - Unsatisfactory, Satisfactory, Excellent, and the highest, Superior. Piantedosi takes great pride in their "Superior" rating and is committed and determined to continue their hard work towards this great achievement.
